Jodi’s Homemade Caesar Salad Dressing

**warning:  it’s strong (the way Caesar is meant to be)
  • 2 small garlic cloves, minced
  • 1 teaspoon anchovy paste (i do a heaping teaspoon)
  • 2 tablespoons of fresh lemon juice (i buy it in the bottle – you can use fresh lemon)
  • 1 cup mayonnaise (any brand you like!)
  • 1 teaspoon dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2  cup freshly grated Parmigiano-Reggiano cheese (this exact cheese is important)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 – 2 tablespoons olive oil (you may add more if you want the dressing to be less thick)
In a medium bowl, whisk together garlic, anchovy paste, lemon juice, mustard and Worcestershire sauce.  Next add the mayo, the grated cheese and salt & pepper.  Whisk it all together until well combined. Once you see it this way, you’ll know if you want to add olive oil, or just have a super thick and creamy dressing. Cover and keep in the refrigerator. It gets better/stronger the longer it sits! Will keep in the fridge for about a week.
